One Food, Many Recipes: Pasta with Chicken

To be honest, we haven’t been using up the rotisserie chicken in as many delicious dishes as we normally do. Doug and I were rarely home at the same time this week, so we didn’t have dinner together much. In my haste one night, I made pasta and threw some chicken and vegetables in there. When in doubt, go with the pasta. Unfortunately, it didn’t really taste all that good. I’m not sure if it’s because I was in a dour mood or if I didn’t let the vegetables cook long enough. Normally, though, I would always recommend a simple pasta dish. Granted, the pasta above doesn’t look great, and not all pasta does, but it is easy and quick!
Ingredients:
High-fiber penne pasta
Rotisserie chicken
Garlic marinara sauce
Mushrooms
Asparagus
*Notice I didn’t put any measurements on here – you can add as much or as little as you want to your pasta. Throw in other vegetables, make it vegetarian, add cheese – do whatever you like!
Directions:
Cook pasta according to directions on package. Heat sauce to a slight boil and add chicken and vegetables. Set sauce mixture to simmer while vegetables cook. Once vegetables are tender, pour over cooked noodles and enjoy.
